Easy Pasta Red Sauce:
Ingredients:
Olive oil 2 tbsp
Diced onion 1
Minced garlic 3-5 cloves
Dried basil 2 tsp
Red chili flakes ¼ tsp
Salt ½ tsp
Caster sugar ½ tsp
Butter 1 tbsp
Chopped tomatoes 2
Tomato paste 2 tbsp

Method:
Heat olive oil. Saute the onions, until they soften. Add the garlic. Add the basil, red chili flakes, salt and sugar. Add the butter. Add chopped tomatoes and paste. Stir in 1/4 cup water. If the sauce seems too thick, add additional water. Allow sauce to simmer. Cool and set aside if not using immediately. Otherwise pour over pasta.


Basic White Sauce:
Ingredients:
Butter 2 tbsp
Flour 2 tbsp
Salt 1 tsp
Black pepper 1 tsp
Mustard paste 1 tsp
Milk 2 cups
Grated cheese 1 cup
Method:
Heat butter and add the flour and let it sauté on low. Once aroma arises, add in salt pepper and mustard. Remove from stove and add slowly the milk, keep whisking and cook till thick. Lastly add in cheese. Fold in the earlier boiled and drained pasta and serve immediately.


Pasta:
Ingredients:
Flour 5 oz
Egg 1
Egg yolks 2
Method:
Mix flour, yolks and egg together and form dough. Let rest for an hour. Roll out very thinly and form into various shapes. Add in a big pan of hot water with some salt and oil. Let cook 7 minutes or until al dente. Drain and add into sauce and serve immediately.
